Overwhelmed by the idea of homemade slow-cooked bone broth? Confused about the difference between meat stock and bone broth? Come learn how to make nutrient-packed, soul-warming, delicious gelatinous bone broth as well as meat stock and braised meats. We will discuss the pros and cons of various methods including stove top, slow cooker and pressure cooker options. Additionally, we will chat about the beauty benefits of bone broth and the new Bone Broth Diet. Recipes and detailed instructions included. Class will be held in Encinitas. $60 fee.

Min’s Country Sourdough Bread
The ever popular true sourdough class will give you everything you need to know to start making light and airy, 36 to 42 hour fermented sourdough bread in the comfort of your own home. Min is always an inspiration and full of new tips for providing nutritional and eye-pleasing meals for your family. This class also includes homemade sourdough starter, as well as instructions for maintaining starter. Class will be held in Encinitas. $60 fee.

Get Cultured!
Cultured dairy offers many benefits including friendly bacteria as well as easy to digest calcium. Probiotic-rich homemade yogurt, kefir and sour cream are easier to make than you think. We will include our favorite yogurt culture, viili, which is always a favorite. This class is perfect for those embarking on the GAPS Diet, as well as anyone wanting to provide the highest quality cultured dairy for your family in an economic way. No special equipment needed. Just the desire to get cultured! Class will be held in Encinitas. $60 fee.

Bubbly Vegetables & Fruits
There’s a lot more to facto-ferments than sauerkraut! Learn how to make your own probiotic-rich favorites  including kim-chi, sauerkraut, beet kvass and fruit chutneys, teeming with beneficial bacteria, adding tasty flavor to your meals, after this hands-on class.  We will discuss therapeutic uses for beet kvass and how to incorporate these probiotic foods into your family’s diet with ease.  This class is perfect for those planning to begin the GAPS Diet.  Class will be held in Encinitas.  $60 fee.

While certainly the most nutrient-dense food on the planet, liver can be intimidating. Did you know that liver is the best source of bioavailable vitamins B12, B6 and folic acid and vitamin A, as well as an excellent source of vitamins D, E and K2 and minerals zinc, selenium, copper and chromium? Let us take the fear out of liver preparation and entice you with delicious pate’, beyond amazing sautéed liver and onions and our “I can’t believe liver’s in there” shake. salad dressings, marinades and mayonnaise. Instead consider the nourishment that can be provided by high quality oils and cultured dairy in the form of tasty dressings, marinades, aioli and mayonnaise. Come learn home simple these can be made in your own kitchen. Class will be held in Encinitas. $60 fee.

Delectable & Digestible Grains, Legumes & Nuts
Whole grains, legumes and nuts are rich sources of minerals and B vitamins. But without proper preparation both can be challenging to the digestive tract. Understanding what our ancestors did regarding soaking and cooking is critical to deactivating or neutralizing enzyme inhibitors and releasing phytic acid. We will teach you how to handle grains. legumes and nuts with care, making them easily digestible and incredibly delectable! This class will include sourdough tortillas and New Mexico Anasazi refried beans along with all you need for a nutrient-dense and delicious Taco Tuesday meal. Yes, you can! You can learn how to craft true light and airy einkorn sourdough bread just like Min. Well, close. Join us for detailed instruction and demonstration along with a step-by- step written recipe to take home. After gut healing using the GAPS Diet, we suggest true einkorn sourdough bread as an easy-to-digest nourishing bread and perfect complement to butter or pate’. Class to be held in Encinitas. $60 fee.

Coming up just in time for summer! Our Sodas & Snacks workshop! Kim and Min will be joined by Monica Ford and Hilary Boynton for a fun and fast-paced class. Thinking Outside the Lunch Box
School time is here and with that comes the desire to see our children succeed in learning and in developing healthy social interactions. For the purpose of this workshop, we will look at how we can support our children through nutrition. Responsible parenting should include supporting our children’s nutritional needs with foods intended to sustain a healthy body. Seminar includes lunch menus & healthy snack ideas.
