Please join our foodie expert, Min Kim, as she teaches how to make sourdough slider buns, homemade mayo, fermented ketchup, roasted duck fat sweet potato fries and fermented pickles.
We will be eating grass-fed beef patties with our sliders, but please let us know if there are any dietary restrictions. We will do our best to accommodate. Also, no prior sourdough experience necessary.

Min’s Country Sourdough Bread
The ever popular true sourdough class will give you everything you need to know to start making light and airy, 36 to 42 hour fermented sourdough bread in the comfort of your own home. Min is always an inspiration and full of new tips for providing nutritional and eye-pleasing meals for your family. This class also includes homemade sourdough starter, as well as instructions for maintaining starter. Class will be held in Encinitas. $60 fee.
Cultured dairy offers many benefits including friendly bacteria as well as easy to digest calcium. Probiotic-rich homemade yogurt, kefir and sour cream are easier to make than you think. We will include our favorite yogurt culture, viili, which is always a favorite. This class is perfect for those embarking on the GAPS Diet, as well as anyone wanting to provide the highest quality cultured dairy for your family in an economic way. No special equipment needed. Bubbly Vegetables & Fruits
There’s a lot more to facto-ferments than sauerkraut! Learn how to make your own probiotic-rich favorites including kim-chi, sauerkraut, beet kvass and fruit chutneys, teeming with beneficial bacteria, adding tasty flavor to your meals, after this hands-on class. We will discuss therapeutic uses for beet kvass and how to incorporate these probiotic foods into your family’s diet with ease. This class is perfect for those planning to begin the GAPS Diet. Understanding what our ancestors did regarding soaking and cooking is critical to deactivating or neutralizing enzyme inhibitors and releasing phytic acid. We will teach you how to handle grains. legumes and nuts with care, making them easily digestible and incredibly delectable! This class will include sourdough tortillas and New Mexico Anasazi refried beans along with all you need for a nutrient-dense and delicious Taco Tuesday meal. Join us for detailed instruction and demonstration along with a step-by- step written recipe to take home. After gut healing using the GAPS Diet, we suggest true einkorn sourdough bread as an easy-to-digest nourishing bread and perfect complement to butter or pate’. Class to be held in Encinitas. $60 fee.
