Seeded Rye Sourdough & Liver Pâté
While certainly the most nutrient-dense food on the planet, liver can be intimidating. Did you know that liver is the best source of bioavailable vitamins B12, B6 and folic acid and vitamin A, as well as an excellent source of vitamins D, E and K2 and minerals zinc, selenium, copper and chromium? Let us take the fear out of liver preparation and entice you with delicious pâté to add to this tasty traditional seeded rye sourdough. $100 fee, includes rye starter.

One of the most toxic sources of rancid oils are commercially prepared salad dressings, marinades and mayonnaise. Instead consider the nourishment that can be provided by high quality oils and cultured dairy in the form of tasty dressings, marinades, aioli and mayonnaise. In this class we will teach you delicious tonics that will not only support your health but satisfy your palette. We will be making a nutrient packed liver cocktail and our “can’t believe there’s liver in there” raw milk shake, as well as delicious gut-friendly kombucha and beet kvass for liver health. $65 fee.
Cinco de Mayo Burrito Bowls & Tacos
Instruction will include properly prepared soaked rice and beans, braised grass-fed beef, fermented salsa, raw créme fraîche and sourdough tortillas. Understanding what our ancestors did regarding soaking and cooking is critical to deactivating or neutralizing enzyme inhibitors and releasing phytic acid. We will teach you how to handle beans with care, making them easily digestible and incredibly delectable! Kraut & Kimchi Party
Learn how to make probiotic-rich favorites, kimchi and sauerkraut, teeming with beneficial bacteria. We will discuss therapeutic benefits of lacto-fermented foods and how to incorporate these probiotic foods into your family’s diet with ease. This class is perfect for those planning to begin the GAPS Diet. Participants will make and take home fermented sauerkraut and kimchi. $75 fee.

We will include our favorite yogurt culture, viili, which is always a favorite. Plus, a pizza demo! Min is always an inspiration and full of new tips for providing nutritional and eye-pleasing meals for your family. This class also includes homemade sourdough starter, as well as instructions for maintaining starter. Class will be held in Encinitas. $80 fee, includes pizza lunch.

Come learn how to make nutrient-packed, soul-warming, delicious gelatinous bone broth as well as meat stock and braised meats. Summer BBQ Class
Min Kim, foodie expert, teaches how to make sourdough slider buns, homemade mayo, fermented ketchup, roasted duck fat sweet potato fries and fermented pickles. We eat grass-fed beef patties with our sliders, but will do our best to accommodate if there are any dietary restrictions. Also, no prior sourdough experience necessary. $125 fee.
